Coriander Pesto

Great with chicken and pasta

Ingredients:

  • 2 cups fresh coriander (leaves + tender stems)

    1 small handful fresh parsley or basil (optional)

    1–2 garlic cloves

    1/3 cup toasted nuts or seeds (almonds, pecans, cashews, pumpkin seeds)

    1/2 cup extra‑virgin olive oil

    2–3 tbsp lemon juice or lime juice

    1/4 cup grated parmesan or pecorino (optional)

    to taste

    salt & black pepper

Method:

  • Roughly chop the coriander and optional parsley/basil to make blending easier.

  • Add coriander, garlic, nuts or seeds, lemon juice, and a pinch of salt to a food processor.

  • Add parmesan, then blend briefly to combine.

  • Adjust with more lemon, salt, or oil.
