Mint & Pea Soup
Ingredients:
4 sprigs of mint
500 g green peas (fresh or frozen)
1 tbsp olive oil or butter
2 onions
1 garlic clove
2 dl sparkling wine
8 dl water + 2 vegetable stock cubes to make the stock
3 dl cooking cream
1 tbsp elderflower cordial
1 small potato, peeled and diced (for creaminess)
2 tbsp Greek yogurt
Salt and pepper or Tabasco
Method:
Rip off the mint leaves from the stalks.
Warm the oil/butter in a pot. Add onion and cook gently until soft. Add garlic, mint stalks, and wine. Cook until most of the wine has evaporated.
Add the stock, cream, peas, and potato. Bring to a simmer and cook 10–12 minutes, until the potato is tender.
Remove the stalks from the soup and blend
Season with salt, pepper, elder cordial, and Tabasco.
Serve hot or cold. Add the chopped mint leaves when serving with a splash of yoghurt
