Cooking with potatoes

Potatoes (Solanum tuberosum) are starchy tubers native to the Andes. Their colour ranges from brown, yellow, blue, or reddish skin, with white, yellow, blue, or red flesh. Potatoes are low-fat and rich in potassium, vitamin C and B6, manganese, magnesium, phosphorus, niacin, and folate. Purple and pink potatoes are rich in antioxidants. Potatoes are very versatile and can be boiled, roasted, mashed, sautéed, or fried.
